Cool Afterschool Cookie Sandwiches It's National School Lunch Week! October 9 - 13, 2006
Ingredients:
- Medium-sized bowl
- Large spoon
- Container for freezing sandwiches
- 1 container whipped topping, 8 oz. (thawed)
- 1 package instant pudding
- approximately 1 dozen cookies
- sugar sprinkles, chopped nuts, chocolate chips (optional)
Directions:
- Mix whipped topping and instant pudding in the bowl. Let mixture set 3-5 minutes, or until the pudding becomes thick.
- Scoop a generous amount of the pudding onto the bottom of one cookie.
- Place a second cookie on the top of the pudding to make a sandwich.
- Carefully sprinkle or roll the sandwich (like a wheel) in the sprinkles, nuts or chocolate chips. If you squeeze the sandwich, the pudding will squish out and you will have a Flat Stanley* sandwich.
- Freeze the cookie sandwiches for a cool afterschool treat.
*Poor Stanley. A bulletin board falls on him when he is sleeping and he is squashed flat. But what fun it is to be flat! Check out the book Flat Stanley by Jeff Brown.
